[SAYS FARM] is a winery in Toyama. Though our dishes are Italian-based, they are created freely regardless the genre and ingredient. We use wild herbs and vegetables grown at our site, seafood from the fish port in Himi that is in front of us, and eggs our hens have just laid. Our menu is not fixed but it is decided by the chef depending on the ingredients of the day. Enjoy our dishes using local ingredients. Our most precious dashi soup stock here at Tanukiya. You can savor it most simply and directly in our kake udon (thick wheat noodles). We have customers who only ever order this, so it must be delicious - why not try some yourself? We make our dashi stock from kombu kelp harvested near Hokkaido's Rebun Island, and when our guests hear that, some are shocked that we would use such high quality kombu as soup stock. But while we offer reasonable prices, we're dedicated to not making compromises where we shouldn't. Just because we call ourselves a "self" udon (thick wheat noodle) restaurant, it doesn't mean that we don't pay attention to our guests, and we endeavor to get our freshly made food out on time. We also remember the faces and preferences of our regulars and work hard to ensure that you enjoy yourself. Shizuya

The rhythmical sound that can be heard even before the morning breaks is the sound of the master making soba noodles. At Shizuya, only carefully selected whole-grain soba from various regions all over the country is procured. The soba is ground the day before, and soba-making starts early on the day of operation. Therefore, necessary machinery, such as sorting and skin removal, are installed. Millstone is used for crushing the grains into flour and is ground slowly so as not to lose the aroma due to heat. Therefore, the sobagaki (buckwheat dumpling) made with their homemade soba flour is exceptional. Soba flour is also used in the batter of their tempura. It's a pleasure to wait for someone with a soba appetizer and a drink at night. The restaurant is also suitable for a solo diner, as well as for a date, entertainment, or private party. Some people are pleased to have found a favorite restaurant of their own.
