The company buys directly from a single head of Matsusakagyu raised on its contract farm, "Matsusaka Beef Village Ocean Farm." Then, it butchers the beef at its own butcher shop, allowing customers to enjoy a variety of rare parts of the beef. The restaurant's interior is an 80-year-old renovated machiya with an air of history that only a machiya can provide. There are various types of private rooms available, including purely Japanese-style rooms. You can enjoy moromi (fermentation mash) soy sauce ramen, which uses carefully selected ingredients from all over Japan while sticking to "Me, Da, Ka" in a modern Japanese-quality space. The soup stock, which concentrates the flavor of Kumano Jidori chicken and Sansui Jidori chicken, is mixed with Kaeshi, made from soy sauce and moromi, carefully aged using traditional methods.
