Our motto is to offer fresh, seasonal fish at low prices while serving dishes appropriate to each customer. We always pick out the best tuna from the market in Tsukiji every day, buying only from the best producers. Ono says, "We are a small restaurant, and we aim to provide comfort in this intimate space." He focuses on searching for new ingredients and cooking methods in his goal of pursuing great taste. Ono also likes to foster new talent. On Sundays, his day off, assistant chef Jun Yomeyama runs the restaurant (renamed Sushi Sora for the day), and prices are discounted by 30% because Ono himself is not making the sushi.
