Amiyakitei offers a higher grade of delicious yakiniku that can be enjoyed privately in box seats or private rooms. Originally a butcher wholesaler, it carefully selects high-quality and reasonably priced meat found by traveling all over Japan. The meat is cut with professional skill for each order and is served with the utmost attention to freshness. The menu's specialty includes "Beef Salt Tongue" seasoned with herbs and spices and "Domestic Black Beef Special Kalbi (short rib)," which regular guests always order. If you are unsure what to order, "Assortment of 3 Kinds Domestic Beef" allows you to try a small portion of each part of the beef at a discount compared to ordering them individually. Our specialty Carbonara "Udon" (wheat flour noodles), which combine a soup stock made from bonito shavings and bacon fried in butter, have been strongly praised by many many people. The reason for their huge popularity may lie in their secret flavor, the Japanese-style soup stock which all Japanese are constantly longing for on some level. We use many ingredients that we take much pride in, but if we had to choose a couple that we value most, it would be either our seasonal vegetables or "mentaiko" (fish roe). For our udon noodles, we use high-quality 'Shinmenkyokaiden' noodle flour to create noodles with a springy and smooth texture. We are dedicated not only to preparing excellent food but also to providing great service and creating an atmosphere where our customers can feel relaxed and happy throughout their time in the restaurant. Our first head chef, Norio Takahashi, devised this dish. The customers also have a hand in deciding our restaurant's specialties, which is why this dish hasn't been swept away by the passage of time, and is still offered in exactly the same form and with exactly the same flavor as the original dish. We procure our ingredients from all across France and Japan, using only the high quality items fitting for a "Grande Maison" style restaurant. It isn't just a matter of technique, but also the way in which the chef approaches their cooking that is important. The ideal is for the food to remain in the customer's mind for days after their meal. Our food is, of course, excellent, but we are constantly thinking about how we can customize the dishes in response to customer requests. We call our restaurant a "grande maison" because it is a place where the cooking, wine, and service are totally outside of people's everyday experience.
