A reasonable sushi restaurant where you can enjoy carefully prepared white fish and other seafood of Kanazawa.

[Sushi Naoki] is 5 minutes from Higashi Chayagai, a neighborhood in Kanazawa whose latticed windows and cobblestone streets have been recognized as an Important Preservation District for Groups of Traditional Buildings by the Japanese government. It opened its doors in May 2020. The chef, Mr. Kita, is a friend of the fishermen who work at the nearby fishing harbor, and personally visits every day in order to rigorously select the best ingredients for his restaurant. Kanazawa is his hometown, and he wants to share the local flavors with his guests, so he meticulously prepares seafood such as white fishes, bluebacks, and shellfishes from the nearby ocean. He picks out the best fish of each season to serve to his customers, from sardines in spring to Japanese whitings in summer, sea breams in fall, and amberjacks in winter. Here, guests can enjoy dining in a high-class, stately building for a reasonable price.

Our Tomakomai surf clam is lightly heated in boiled-down sake. The true flavors of fish cannot be brought out through broiling, which is in style now, or using kelp to draw out the flavor. What we worked hardest on is how we grip the sushi rice. Come in during autumn for the widest selection of toppings that Hokkaido has to offer. This time of year, the shellfish are from Hokkaido. We are sticklers for using thornyhead fish from Hokkaido, whether boiled or grilled. We hope that even if you order the same thing the next time you come to our restaurant, it will taste even better.
