Our [Japanese Cuisine Shunka] located in it offers only kaiseki (traditional Japanese cuisine) courses with Shinshu's traditional vegetables and Nagano prefecture's proud brand meats. Chef Nakamura's policy is [to offer an abundance of savory dishes]. He has renewed the traditional kaiseki style with a wide variety of small-portioned dishes, into less number of more voluminous dishes, so that the guests can enjoy the seasonal ingredients to their heart's content. Have the ultimate happy moment with the luxurious seasonal cuisine, while enjoying the green trees from private Japanese tatami rooms with tables and chairs. Our signature stewed pork is served as the star among other delicacies served on a long "hassun" plate. It is simmered in sweet potato shochu (Japanese alcohol) until the meat is tender without losing its natural sweetness. With this dish we make sure that every bite has you yearning for the next. The foundation of our food here is rice, and we take great care in its preparation since it is so important to each dish. We cook our rice in a clay pot, monitoring every detail, from water level to heat level. We aim to always make superb and beautiful rice. The lotus is the flower of Buddhism, and we hold our lotus root dishes in high-esteem as we model ourselves on the hospitality style of Buddhist nuns. Enjoy all the lotus roots you desire. Lotus roots are a "lucky" ingredient because of their holes, which are said to bring "good prospects for the future". So you can expect your luck to pick up with our lotus roots. Depending on how they are cooked, they can be "crunchy", "sticky", "crisp", and more, and you can delight yourself in a variety of textures and tastes. We do all we can to make a good impression on our guests - with the arrangement of our dishes, and again with the textures and tastes of foods. We are located in a corner of a quiet suburban area not far from the eastern banks of the Hyoken River, and we are a 15-minute walk from Higashi Okayama Station. Step through the gate and you will be welcomed by a small "jizo" statue. One side of our dining hall has a glass wall where a gentle and elegant light pours in.

Jukusei Hidagyu Yakiniku GYU-SUKE

You can savor the finest Hida Beef near the station. A sophisticatedly designed restaurant specializing in aged Hida Beef yakiniku.

GYU-SUKE is located in the prime location right by Takayama Station. It offers carefully selected yakiniku with the highest quality Hida beef, aged in a terahertz aging cellar to bring out the maximum umami flavor. The appearance matches the atmosphere of the city of Takayama, and the inside of the restaurant is a sophisticated, one-rank higher space with approximately 100 seats. Both the first and second floors are open spaces with different concepts, and there are two VIP rooms on the second floor, which can accommodate up to 10 people when connected. The beef used for yakiniku is female A5-grade Hida Beef raised in Gifu. The Hida beef is aged in the restaurant's aging cellar using a unique technique. The restaurant also has a lineup of about 500 bottles of wine to go with yakiniku. In addition, various drinks are available, including Takayama's sake.

Our chef's first encounter with Ozaki beef was at a nearby restaurant. He wanted to know more about this delicious beef, so he visited the ranch, where he was utterly charmed by both the meat and Mr. Ozaki himself. The cattle are reared over a generous period of time in a stress-free environment, giving the meat a distinctively intense savory flavor. Kagurazaka Maeda, located in the alleyway of Kagurazaka Street, is a restaurant in a house with luxurious Japanese architecture. Inside, you'll find a tatami room with "yukimi-shoji" paper sliding doors, where you can view the gently swaying maple trees in the breeze. The counter seats are made from single wooden boards, and the walls are adorned with fresh flowers creating a noble ambiance. Amidst the hustle and bustle of the city, time flows leisurely here. The cuisine served in this luxurious space is delicate and gorgeous traditional Kaga Kaiseki (multi-course meal). The dishes are full of Kaga-Namafu (raw wheat gluten). The more you eat, the more your senses are stimulated by its aroma, texture, and color. In addition to rare Japanese sake and shochu, you can also enjoy champagne and wine with Kaga Kaiseki.
