Our restaurant uses fish caught the same day in nearby waters, so it's a great feeling to be able to cook the whole fish for a dish like "Acqua pazza." This is a colorful meal, where the flavors of the fish really are splendid. The pork is Hoei pork from Hokkaido-low in fat and calories, while being high in protein. The salt we use is Mediterranean crystal flake salt. Odorless Hoei pork tastes better with salt than with sauce, as the former brings out the sweetness of the meat. The customers don't just pick the brand of the wine they order. We suggest the kind of wine that goes well with the ordered food, or the food that goes well with the ordered wine.
