Their chefs, who have over 30 years of experience making sushi, prepare the dishes using wild seafood, mainly from Setouchi. The menu is the chef's choice, so the chef suggests the method of preparation based on the ingredients that arrived that day while considering the customer's preferences and what is in season. There are always more than 20 different types of fish that change daily, and you can order individual pieces. The restaurant is especially proud of its specialty, boiled conger, and expertly prepared sashimi, such as mackerel and gizzard shad. For instance, [Striped Marlin Matured for 60 Days] releases a subtle scent of fermentation resembling coffee and unique umami. What firmly supports this taste is vinegared rice consisting of rice with minimum moisture and vinegar from [Iio Brewery] from Kyoto. On the other hand, appetizers designed with playfulness are unique and exquisite. [Sushi Kimura] is a representation of Mr.Kimura's spirit, creating the groundbreaking genre of sushi.

The boss's recommendation and most popular item-Ezo nigiri sushi which includes sea urchin, Ezo abalone, king crab, and fatty tuna. This gorgeous nigiri sushi, as well as the salmon roe donburi (rice bowl), are sure to satisfy. Contains ten distinct flavors altogether! The taste of the sea urchin itself is delicious. We only use salt water urchin. Eating hairy crab can be difficult, but the meat is dressed with miso. It has a rich flavor and is truly the best way to eat it. Customer satisfaction is of fundamental importance as we uphold the traditional customs. With plenty of parking as well as a spacious interior, you are welcome to come with your family and relax.
