How about Italian cuisine in Nagoya? Our regular customers join us for our signature dish, but are regularly surprised by the new items on the menu. Come experience them for yourself.

This is our signature dish that has been on the menu since our opening 23 years ago. We have many regulars who come to our restaurant for this dish, in which they enjoy the texture of tokobushi (a type of abalone) and the sweetness of cabbage. For 23 years, we have been getting our ingredients straight from a contracted farm. We use seasonal ingredients in our dishes, so it is difficult to name a specific key ingredient. If I must name something, I would say "Noir de Bigorre pork" or duck that we purchase through an acquaintance in Niigata. We hope to never be satisfied with the present state and continue to evolve in our pursuit of good food for our customers who visit us with high expectations. We also hope to surprise regular customers with new dishes. Many of our customers are adults who like to take their time to enjoy food and drinks, but we also have young customers who come for special occasions, anniversaries, and seasonal events.

Boneless hotpot, fabulous freshness simmered to perfection served in a space reminiscent of a Japanese inn

The Japanese loach in our boneless hotpot is added to the pot raw. When comparing loach simmered fresh in-pot with loach that've been simmered beforehand, you'll find that the former has a far superior texture and taste. We obtain our loach mostly from Chiba, but also from Akita and Ibaraki. Each area has a different environment and, thus, the fish, a different flavor. Additionally, great care is taken when we select burdock and green onion, indispensable for loach hotpot. Without fussing over the area of production, we bring in what's best at the time. The first floor seating is easy to view from the side entrance kitchen. Thus, our chef doesn't fixate solely on making food, but also takes a reading on the guests beforehand to see what sort of food experience they're wanting, mindful to have guests fully satisfied with their meals. As a shop with history, there've been times when regulars have brought in their children and their grandchildren, too, sharing a meal spanning three generations. It's a joy to see

Make things from scratch and you can create your own unique flavor.

This dish, like all our cooking, is made from scratch and possesses its own unique flavor. Even with "so," a traditional Japanese dairy product, I insist upon freshness. The color is something that is completely different from processed food products, and the flavor is unlike anything else. Our homemade-style dried mullet roe is made without removing too much moisture, ensuring its soft texture. If the customer wants, we can slice and serve it with alcohol, but we recommend its soft texture as ideal with steamed rice. Since moving to this location, we haven't had a fixed closing time. We want customers to relax while they are here. After the meal we serve a sweet dish and a cup of houji tea (roasted green tea). Enjoy tea made in a kettle of clear well water. Just one cup serves to relax both mind and body.
