Although it is often said that starters should be light and simple, this restaurant serves "Otoro" (fatty tuna) as a starter of the "Omakase"("Select") course. We serve the fatty sushi at the beginning because we want the customers who may have queued to eat this rich-tasting sushi first. Our motto is to make sure the fish that we serve is fresh and seasonal, wherever the place of origin of the fish may be. Mr. Urushihara says, "Based on my experience, I believe it is very crucial to pick fresh fish, and also to build a strong relationship with the fish wholesaler". Mr Urushihara goes around the fish market by himself every morning to buy fresh fish that are in season. We value not only the taste but the conversations we have with our customers over the open kitchen as well. Don't hesitate to visit our sushi restaurant and enjoy delicious sushi here.
