Ristorante ACQUA PAZZA

They aim to use high-quality Japanese ingredients to create regional Italian cuisine, starting with their signature [Acqua Pazza].

This restaurant opened in April 2018 after relocating to Minami Aoyama. Back when people didn't fully understand the charms of Italian cuisine, Hidaka opened Acqua Pazza, making it the pioneer for introducing the deliciousness of the cuisine to Japan. All the ingredients were selected and procured from local Japanese producers by Hidaka himself, following the Italian culture of caring for each component. In particular, he talks with fish dealers on a daily basis to check on what fish he can procure at any given time. Anyone eating their signature [Acqua Pazza] will be satisfied with the deliciousness and quality of the ingredients! The taste of the fish is the star of the dish thanks to its simple preparation. It'll make you feel like you've been transported to a port town in South Italy!

Smoked scallops served in the perfect location for a special anniversary or celebration for ultimate customer satisfaction.

This taste is representative of "Ristorante Misato" and has not changed since the restaurant opened. An original blend of three different types of wood chips are used to smoke the scallops. Enjoy the refined aroma and flavor. We grow them ourselves with seeds imported from Italy. They are a beautiful red shade with a depth to their flavor, and when they are cooked, their sweetness becomes even more pronounced. We adjust the ingredients or seasonings of the dishes to pair them beautifully with the wine the customer has on the table. Fresh bread and organic vegetables together with a versatile wine selection

Since our alcohol selection is mostly wine, we use our own original recipes to make a large selection of homemade bread to pair with wine or serve as a palate cleanser. Furthermore, we don’t have a wine list here, nor do we offer descriptions. This is because we take a lot of care in finding the best wine for each customer’s taste. We take the time to listen carefully to what kind of flavor each customer prefers and then use that to match them with a delicious wine to enjoy. We also use seasonal organic vegetables as much as possible with our food, as well as offer a selection of hard to find vegetables like shio (salt) tomatoes, all of which can be ordered in whatever amount you prefer. The dining atmosphere we provide here is perfect for enjoying our wine and kushiage (fried meat/veggie skewers) in comfort. The calm and relaxing atmosphere inside is well-suited for a date, too. We also offer a dessert course with a combination of three different items to enjoy during parties and other events.

Our appetizer platter features a variety of fresh ingredients that recreate the sensations of the season on a single plate. Our restaurant is known for dishes featuring suppon (soft-shelled turtle), and we only use suppon with the right qualities. We serve seasonal ingredients simmered in soy sauce. To support the flavors of the raw ingredients, we use high heat to produce a light, fluffy body. Whether it's vegetables, seafood, or meat, our chef is particular about fresh, high quality ingredients. The platter of hors d'oeuvres for the prix fixe banquet uses seasonal ingredients with vibrantly colorful presentation, which lets the chef's eye for fine details shine through. As the owner of a store positioned within Adachi Market, the chef always says, "I'd like to my customers to enjoy a fresh stock of seafood at reasonable prices." The chef plans about one or two events a month where you can enjoy even more of a bargain than usual. By all means, go ahead and enjoy a banquet cooked with fresh seasonal ingredients, and an expansive stock of delicious alcoholic drinks.
